Shape and dimensions of the cylinder. There are three types of shapes your cylinder can have: europrofile, oval, or round. Make sure that the escutcheon you choose fits your cylinder. Also, cylinders protrude from one or both sides of the door. In that case, the escutcheon must have a sort of shim to raise the escutcheon slightly off the door to protect the cylinder.
Note: Most cylinders are europrofile, and therefore most escutcheons are for these cylinders.

Diameter of the hole. Sometimes escutcheons are recessed into the wood, and other times they sit flush with the door, and there will be no need to make a hole. This will depend on the characteristics of your door. Recessed cylinders are not necessarily more secure, but you won't always be able to recess them.

Fill. Finally, there are solid cylinders and hollow cylinders. The solid cylinder that is recessed is always the best option and the highest quality, and the type of steel will also indicate the level of protection.

Sometimes, for aesthetic and security reasons, it is decided to use an escutcheon protected by an additional plate or a more elongated oval shield. This is a non-essential extra (whereas an escutcheon is essential), but it never hurts to add elements that hinder access to your cylinder and, by extension, your lock.
